A V A (American Vitultural Area) is the entity which determines our wine appellations in California.  We have expanded this idea to include California’s agriculture.  The finest ingredients from California have been sourced based on growing area and season: Marin Sun Farms beef, Devil's Gulch pork, Navajo-Churro lamb, wild salmon, halibut and tuna from our coastal waters, Bolinas and Petaluma lettuces, cheeses from Marin, Sonoma and Humboldt counties, almonds and arbequina olive oil from Modesto, arborio rice from Yolo county, and so on. We go to the highly touted San Rafael farmers’ market twice each week to purchase produce for the restaurant.  The commitment we are making towards sourcing local and sustainable ingredients also results in the supporting of smaller, family-run businesses.  This has many purposes, including a higher quality product and a stronger connection to our ingredients.
